Fast Food Chains Tighten Kitchen Hygiene in Mumbai Amid State FDA Crackdown
Restaurant brands operating in Mumbai and across Maharashtra are intensifying internal inspections and tightening hygiene compliance in response to a sustained crackdown on food safety violations by the Food and Drug Administration (FDA). The heightened vigilance from food safety authorities in states such as Maharashtra and Karnataka has targeted eateries, canteens, and online delivery platforms over sanitation breaches and the sale of substandard items.
At fast-food chain Biggies Burger, internal audit protocols have been escalated across all company-owned and franchise-operated outlets. The chain's central quality assurance team is now conducting unannounced operational audits to inspect hygiene adherence, cold-chain compliance, and the validity of raw materials, according to founder and chief executive officer Biraja Rout.
Store managers at the chain have also been instructed to complete daily digital checklists before opening and after closing their kitchens. "Opening and closing signoffs require visual photographic evidence of clean surfaces, oil quality, and storage areas uploaded directly to our central operations portal," Rout said.
Other major chains are adopting measures to reassure consumers. A spokesperson for KFC India stated that customers seeking details regarding kitchen procedures and safety protocols are being permitted to take kitchen tours. While the company noted that such tours were previously available, the initiative is being highlighted to directly address consumer concerns during the ongoing regulatory scrutiny.
The push for improved kitchen compliance comes ahead of the festive season, which traditionally accounts for a major share of annual sales for restaurant businesses. Recent months have seen the FDA take severe enforcement measures across Maharashtra and Karnataka, including sealing food warehouses and suspending commercial operating licenses.
The broader regulatory push has placed multiple high-profile food brands under scrutiny, including Domino's. Five-star hotels have also faced enforcement actions, with the Food Safety and Standards Authority of India (FSSAI) recently issuing formal notices to two luxury establishments in Delhi over hygiene violations.
